LEAP's Key Assumption branches are simply places within your model that you can use to store relevant information. Often, Key Assumptions will be referenced inside other LEAP expressions that change the way energy is consumed or produced. Those included in the Freedonia example are just that - examples - but they demonstrate typical kinds of Key Assumptions that many models use (i.e. population, urbanization, etc.).
So, the choice of which Key Assumptions to include will need to be decided by you, based on the type of model you're building, the level of details, and the characteristics of your energy system.
