In addition to setting energy intensity and total amount, can we set carbon emission total amount and carbon emission intensity in the model?

Yes - you can specify the emission intensities for different energy technologies as well as non-energy sector GHG emissions. LEAP is not just limited to looking at CO2 (or carbon) emissions, you can examine the emissions for all pollutants including all GHGs, all SLCPs as well as local air pollutants and other energy-related environmental impacts.
A few tips on getting started with this:
1. In the General: Settings screen, first enable Energy Effect and (if required) Non-Energy Effects.
2. In your tree structure create effect branches below each relevant energy-using technology. You can quickly add multiple emission factors to a technology using the gree double plus button. IPCC Tier 1 emission factors can then quickly be added to each technology.
